Gula Melaka Banoffee

The familiar flavours of a banoffee cake, brought up to date with the rich fragrance of gula melaka*.

Caramelised banana and crème pâtissière sandwiched between two layers of a decadent gula melaka* sponge cake and coated in gula melaka buttercream, topped with a generous sprinkling of almond brittle for a bit of crunch!

We would recommend removing from the refrigerator 20 minutes or so before serving, as this cake is best enjoyed at room temperature.

Suitable for vegetarians

*Gula Melaka is a variety of palm sugar originating from the Malaysian state of Malacca (“gula” being the Malay word for “sugar”). The labour intensive process of producing it from the flower buds of the coconut palm results in a deeply complex flavour profile familiar to any Malaysian.
